Last week I made homemade latkes and homemade applesauce for our annual Apple Day celebration. They both came out great. I used these recipies:
Classic Latkes - I ended up adding a bit of flour because the mix was wet, maybe about a quarter cup. I also didn't have any chives so omitted that. I did use the matzo meal, which I couldn't really taste in the end product, however these came out very good so maybe don't skip! If you do I'm sure you can sub in more flour or maybe some panko.
Applesauce - This made a delicious super easy chunky thick applesauce. I did have to add more water, probably around a half a cup. I also used about half the sugar since the apple variety I used were very sweet, and I omitted the cinnamon since it was for latkes.
La Scala Chopped Salad - I also made this last week and I'm going to make it again. Absolutely delicious! I'm going to add kidney beans along with the chikpeas this time, and I think just one head of iceburg lettuce and no romaine. This makes a HUGE salad if you use both lettuces. Make sure to get a very hard salami. The one I got was kind of mushy in the middle and I thick it would benefit from a harder one. I think this would also benefit from some red onion and pepperoncinis.
Stuffed Acorn Squash - Ok now this was the star of the show last week and I will be making it again. This stuffing was SO good. The acorn squash was pretty bland, I'll just be making the stuffing again. I used Jimmy Dean sage breakfast sausage, and you should, too. That shit is so good. If you don't have that, regular ground breakfast sausage should do, just make sure to add the sage if it doesn't have it in it. I also didn't have wheat bread, and just used CHEAP white bread. Like $1 loaf of white bread, and dried it out in the oven for about 15 minutes until it was very crunchy and lightly toasted(but not burnt!!). This was seriously so good, I took it to work and two of my coworkers said it was the best stuffing they've ever had. Make sure not to skip the apples or cranberries, they really round out the dish. If you do want to make it to stuff the squash, I would say get three squash. The recipie only calls for one but this makes a lot more stuffing than you need for just one. I put the extra in a 8x8 glass pan and threw it in the oven for about twenty minutes until the top was crunchy.
I also got stuff to make my usual roasted root veggies (see below for recipie), and this week instead of MLE's, I'll be making ham swiss and dijon sandwiches.

I went to the pumpkin patch with my best friend and we stopped at the farm stand. I want to make tempura kabocha. These eggs are delicious!
I would like to make more of an effort to shop at the local farm stands and farmer's market because the produce at them is far superior than what I can get at the regular grocery store and it directly supports the farmers. It's also about the same price for most things. I'm going to try.

Recipies:
Roasted root veggies - I love making these. They make a good dinner side or for breakfast topped with a fried egg. I use one of those slap chop things to cut everything into uniform 1/2 inch cubes. This week I did potato, carrot, beet, parsnip, turnip, red onion, and garlic. I had some bacon grease so I tossed them in that, and seasoned with salt, pepper, and rosemary. Bake in the oven at 400 until they're yummy.
The MLE - I used to work at this bakery that had sandwiches and this was my favorite one. Toasted sourdough bread with turkey, bacon, avocado, lettuce, red onion, swiss cheese, lots of mayo, and salt and pepper. The bread HAS to be toasted, and you MUST put salt and pepper on it. Serve with sea salt kettle chips and a dill pickle.

Warm Swiss Chard Pasta Salad - I haven't made this before but it seems yummy and good for the fall weather. I will be adding some pan fried andouille sausage.
Update: this was gross and I think I don't like chard
Roasted Garlic and Rosemary White Bean Soup - I made this last week and it was delicious. Delicious peasant food. Really easy and highly recommend with a couple of pieces of heavily buttered bread.
Bulgarian Potato Pie - I haven't made this one either. Seems super easy and I like that I can eat it for any meal.
Breakfast Hash - I like to make this for an easy breakfast throughout the week. Mix n match potatoes, sweet potatoes, other root veggies like turnips beets or radish, bell pepper, onion, garlic, fresh herbs, and some kind of meat. Cube everything small then roast in the oven around 350 until crisp. In the morning I'll heat it in a pan and top with either sharp cheddar or feta, then do a sunny side up egg and avocado.
Warm Chickpea Quiona Arugala Salad - One of my fav salads. Cook up some quiona, then roast in the oven til crisp. Roast chickpeas til crisp. The dressing is so easy. Grab a jar and add good olive oil and lemon juice. I do a bit more lemon juice than oil. Lots of minced garlic. Salt and pepper. I add feta and cubed cucumber then mix everything together.
